Video Introduction:


Discover the spiced flavors of Bali’s virtually unknown cuisine. Classes offer a fascinating introduction in to the exotic ingredients and unique culinary heritage of Bali. They provide a valuable insight into the various techniques of food preparation and the cooking style used in our island homes.



Classes start with an early morning visit to the local vegetable and fish market where many of the ingredients are purchased for the day’s program, including spices, meat, chicken, cakes and the freshest available seafood. Visitors will witness and experience the very busy, early morning activities of the local community, who is eager to finish their shopping well before 8.00 am. The next stop will be on the beach with Ibu Nyoman who is collecting the fish from the returning fishing fleet. No fish will make it into our shopping basket that has not crystal clear eyes and carries the freshness of the wide ocean. After a satisfying breakfast of Balinese cakes, fruits, black rice pudding and a bowl of tender sweet rice flour dumplings in palm sugar coconut sauce, we will leave the comfort of the dining pavilion and enter the wide open Balinese kitchen. Dressed in black and white aprons and a copy of 20 recipes participants will be guided into the many secrets, and flavors of Bali and at the same time, discover and feel the peacefulness of a harmonious Balinese home. You will even find out what come first, the chicken or the egg.


The Host:

Most lessons are hosted by Heinz von Holzen, author of five highly acclaimed cookbooks, (The Food of Bali, Bali Unveiled – The Secrets of Balinese Cuisine, Feast of Flavors from the Balinese Kitchen, Feast of Flavors from the Indonesian Kitchen,  and Street Food in Bali) and the assistance of his talented Balinese Chef, and long time friend Pak Bagus. After four most informative and entertaining hours in the kitchen the small group will face the grandest and final task, sampling and enjoying the mouth watering dishes which the group has prepared. The day will conclude after a glass of piping hot Balinese coffee, the ever-popular black rice pudding and a creamy pumpkin cake.

  • Sate Babi – Pork Sate
  • Base Sate – Peanut Sauce
  • Sate Lilit – Minced Seafood Sate
  • Tum Ayam – Minced Chicken in Banana Leaf
  • Lawar Gedang – Green Papaya Salad with Prawns
  • Pecelan – Vegetable Salad in Peanut Dressing
  • Sayur Pakis – Fern Tips in Spiced Chilli Dressing
  • Ketipat Lontong – Rice Cakes
  • Ayam Pelalah – Shredded Chicken with Chilli and Lime
  • Urab Jagung – Sweet Corn with Grated Coconut
  • Pisang Goreng – Fried Bananas
  • Nasi Goreng Mawut – Special Fried Rice with Noodles, Chicken and Vegetables

Time table:

  • 06.00 am – 06.05 am – Pick up from various locations in Tanjung Benoa
  • Free pick up in Tanjung Benoa, Nusa Dua and Jimbaran
  • 06.10 am – 06.15 am – Pick up from various locations in Nusa Dua
  • 06.20 am – 06.25 – Meeting point from all other areas in Bali will be  at Mc. Donalds in Jimbaran
  • 06.25 am – 06.30 – am Pick up from Jimbaran hotels
  • 06.30 am – 06.35 am – Arrival at Jimbaran Village Market. Refreshments will be served
  • 07.50 am – Transfer to Jimbaran Fish market
  • 08.30 am – Transfer back to Tanjung Benoa
  • 09.00 am – Breakfast
  • 09.45 am – Beginning of cooking
  • 13.30 pm – Conclude day of cooking
  • 13.30 pm – Lunch
  • 14.45 pm – Day concludes
